Cornflake Cookies

Hint #1: Waste no time because the syrup and sugar will set rather quickly.

Hint #2: Use a spritzer bottle of vegetable oil or olive oil and coat the spoon before scooping the cookie mixture. This prevents the mixture from sticking to the spoon.

Hint #3: Don’t refrigerate cookies as they will harden up.
Ingredients
- 5½ cups of plain cornflakes
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 1 tsp. Vanilla extract
- ⅓ cup semi-sweet chocolate chips
- ¾ tsp. Vegetable oil or coconut oil (my preference is coconut oil)
Instructions
- Line a large baking sheet with parchment paper
- Add cornflakes to a large bowl
- In a medium sized pan add the corn syrup and sugar and heat over medium heat until sugar dissolves.
- Once sugar is dissolved, remove the pan from heat and stir in the peanut butter and vanilla until combined and smooth.
- Pour mixture over cornflakes and stir gently using a large spoon or large spatula until “all” the cornflakes are coated.Hint #1: Waste no time because the syrup and sugar will set rather quickly,
- Use a large spoon to scoop the desired cookie size onto the parchment paper. Hint #2: Use a spritzer bottle of vegetable oil or olive oil and coat the spoon before scooping the cookie mixture. This prevents the mixture from sticking to the spoon.
- Let the cookies cool and set for about 30 minutes.
- Mix the chocolate chips and vegetable oil or coconut oil in a small microwaveable bowl. Microwave in 20 second intervals, stirring at each interval, until chocolate is completely melted.
- Drizzle desired amount of chocolate on each cookie.
- Hint #3: Don’t refrigerate cookies as they will harden up.
