Dad’s Instant Pot Hamburger Soup

Ingredients

• 2 lg. russet potatoes
• 1 ½ lbs. extra lean ground beef
• 1 med. onion finely chopped
• 3 cans (14.5 oz) beef consomme
• 1 28 oz. can of diced tomatoes
• 2 cups of water
• 1 can of condensed tomato soup
• 4 carrots finely chopped
• 3 stalks of celery finely chopped
• 4 tbsp. pearl barley
• ½ tsp. dried thyme
• 2 bay leaves
• 1 tsp. chopped garlic
• pepper to taste
• salt to taste
• 1 10 oz. can of corn
• 3 lg. russet potatoes diced
