Air Fryer Steak Kabobs

Ingredients
- 1/2 lbs filet mignon per person, cut into 2 inch chunks
- Any of the following items can be added: Red onion slices, vidalia onion slices, zucchini, muchrooms, small whole tomatoes, raw seasoned shrimp, pineapple chunks, green, red, or yellow pepper chunks, or anything you desire—-be creative!
- 2 tablespoons olive oil
Dad’s Steak Seasoning Rub
- 1 ½ (3) ea. tbsp. salt
- 2 ½ (5) ea. tsp. paprika
- 1 ¼ (2 ½) ea. tsp. ground black pepper
- ½ (1) ea. tsp. onion powder
- ½ (1) ea. tsp. garlic powder
- ½ (1) ea. ground cayenne pepper
- ¼ (½) ea. tsp. turmeric
- ¼ (½) ea. tsp. Ground coriander
Instructions
- Season filet mignon 2″ cubes with “Dad’s Steak Seasoning Rub” and let it rest at room temperature for an hour. I place the steak cubes in a baggie, add seasoning, and shake until thoroughly coated. Letting the steak cubes rest is an optional step, but really helps to keep your steak tender!
- Preheat air fryer to 400°F if your air fryer requires pre heating.
- Thread beef and vegetables onto skewers. Start the skewer with a piece of steak and continue adding vegetables and steak until the skewer is full. We usually do one piece of steak followed by three pieces of vegetables. Pack tightly.
- Repeat until skewers are full.
- Place the prepared skewers in the air fryer basket or on an air fryer rotisserie.. Coat the vegetables with olive oil and seasoning to taste.
- Cook in an air fryer at 400°F for 15 minutes, flipping half way through the cooking time if in a basket. If on an air fryer rotisserie no need to do any flipping. Check with a meat thermometer for your level of doneness. 2″ cubes at 15 minutes at 400°F should cook to around medium rare plus.
- Once your steak kabobs are cooked to your desired doneness, remove the shish kabobs from the air fryer and wrap them in foil. Allow them to rest for 3-5 minutes, then serve.
