McDonalds French Fries

Notes
The process will not work unless all the steps, times, amounts and sizes are exact!!!!!!
Ingredients
- 4 ea. lg. Idaho potatoes
- ½ cup of corn syrup
- ½ cup granulated sugar
- Canola oil
- Salt
Instructions
- Square off potatoes, cutting off both ends and squaring off all four sides. Potatoes must be cubed shape.
- Cut off ¼” slices of the potato. Cut those slices into ¼” square french fries. The exact size of the fries must be ¼” x ¼”.
- Soak cut fries in very cold water for 5 minutes, rinse and pat dry.
- In a large pot (must have a lid) put 12 cups of water, ½ cup of corn syrup, and ½ cup of granulated sugar. Bring to a boil then take the pot off of the burner. Put in French fries, put on the lid, and allow to soak for 10 minutes. (Must be exactly 10 minutes!)
- Remove French fries, place on paper towels, and pat dry. (At this point the fries for future use can be packaged and frozen.)
- Place French fries in the freezer for 20 minutes.
- Heat frying oil to exactly 350 degrees F. Use a thermometer to make sure the temperature is correct.
- Take French fries out of the freezer, place in the fryer and cook for exactly 2 minutes. (Blanch only). Remove French fries from the fryer and allow to rest for 10 minutes.
- Put French fries back into the fryer and fry for exactly 7 minutes.
- Remove fries, place on paper towels, and salt to taste.
