Crispy Fried Catfish/Tilapia

Notes
Always a good idea to soak fish is milk in the refrigerator for one hour prior to preparation.
After removing fish from refrigerator, rinse and pat dry with paper towels.
Ingredients
- 1 lb. catfish or Tilapia filets
- Buttermilk
- Vegetable oil or lard
Cornmeal Mix:
- ½ cup of all-purpose flour
- ½ cup of cornstarch
- ¾ cup of yellow cornmeal
- 1 tbsp. Creole seasoning
- ½ tsp. garlic powder
- 1 tsp. ground black pepper
Instructions
- Rinse filets under cold water and pat dry with paper towels.
- Place filets in a bowl, cover with buttermilk, mix with hands to ensure all of the surfaces of the fish are covered with the buttermilk, cover and refrigerate for 30-60 minutes.
- In a large zip top bag, combine flour, cornstarch, Creole seasoning, garlic powder, and black pepper.
- Heat oil in a large skillet, preferable cast iron, to medium high heat, about 400 degrees.
- Drain buttermilk from the fish, and allow excess to drip off of the filets.
- Drop one filet at a time into the cornmeal mixture and shake to coat thoroughly.
- Fry the filets for 3-4 minutes each side.
- Remove from the hot oil and drain on paper towels, Serve immediately while still hot.
