Dad’s Mussels with Garlic, Tomatoes, and Capers

Be sure mussels are debearded,
- To debeard, pull out the extruding “beard” with your fingers or a pliers.

Only use mussels that are closed before cooking.
- !Do not eat mussels that have not opened after cooking!
Ingredients
- 20-25 ea. large fresh mussels
- 3 ea. tbs. extra virgin olive oil
- 1 ea. med. sized onion, chopped
- 8 ea. garlic cloves, minced
- 1 ea. can (14.5 oz.) diced tomatoes
- ½ ea. cup dry white wine
- 1 ea. tsp. salt and ½ ea. tsp. pepper
- 1 ea. tbsp. fresh lemon juice ¼ ea. cup freshly chopped basil
- 1 ea. tbsp. Capers
Instructions
- Be sure mussels are debearded,
- Thoroughly rinsed with cold water, and towel dry to remove as much excess water as possible. Only use mussels that are closed before cooking.
- In a large heavy skillet, heat olive oil on medium heat.
- Once oil is hot, add onion and cook until soft.
- Add garlic and stir for one minute.
- Add a can of tomatoes with juices, add salt and pepper. Lemon juice, capers, and wine stirring well to combine and heat through, 1-2 minutes.
- Add mussels to the skillet, mix contents, cover with lid, then lower heat to simmer.
- Continue to simmer until almost all mussels are opened.
- Add fresh basil with one last stir and serve warm.
