Corn And Crab Bisque

Ingredients
- ¼ ea. cup of butter
- salt and pepper to taste
- ¾ ea. cup of chopped onions
- 2 ea. cups of frozen corn
- 3 ea. 14.5 oz. cans of chicken broth
- ½ ea. cup half-and-half
- 3 ea. chopped garlic cloves
- 3 ea. tbsp of all purpose flour
- 3 ea. bay leaves
- ½ ea. tsp. cayenne pepper
- ½ ea. cup of whole milk (or ½ & ½)
- 16 oz. fresh lump crabmeat
- 1 ea. tsp of Cajun or Creole seasoning
Instructions
- Heat butter in a large pot over medium heat. Stir in onion.. Cook until onions are soft and translucent
- Pour in chicken broth and bring to a boil.
- Stir in garlic, bay leaves, cayenne pepper, Cajun (or Creole) seasoning, salt, and pepper.
- Add corn to boiling broth and simmer for about 10 minutes then reduce heat to medium low.
- Remove 1 ea. cup of soup mixture and pour into a food processor. Pour in half-and-half. Puree for about 1 ea. minute then set aside.
- In a small bowl add whole milk (or half and half) and all purpose flour stirring together until all lumps are removed. Slowly add to the soup mixture stirring constantly for approx. 2 ea. minutes.
- Stir in puree mixture.
- Reduce heat to low then stir in crabmeat and cook until warmed through, about 5 mins.
