The Story Of Bonny Butter Cake
My very first attempt at baking, and amazingly that first attempt was from scratch, was this “Bonny Butter Cake”. The year was 1982. I wanted to do something special for my daughters so I decided to bake a cake. It actually turned out pretty good.
Just as a side note, it was a challenging time for me and my daughters, the details of which best be shared only between my daughters and I. Because it was a challenging time is the reason I was encouraged to bake a cake for them. During that time, only Renee’ and Kelly would know the significance of “your turn to be the baloney”.
Ingredients
- Cake
- ⅔ cup butter softened
- 2¾ cups Gold Medal Flour
- 1¾ cups sugar
- 2½ teaspoons baking powder
- 2 ea. eggs
- 1 ea. tsp. salt
- 1½ tsp. vanilla
- 1¼ cups milk
- French Silk Frosting
- 2 ⅔ cups confectioners’ sugar
- ⅔ cups softened butter
- 2 ea. oz. melted unsweetened chocolate (cooled)
- ¾ tsp. vanilla
- 2 ea. tbsp. milk
Instructions
- Cake
- preheat oven to 350 degrees
- grease and flour baking pan 13”x9”x2” (or) 3 ea. round pans 8” x 1½”
- mix butter, sugar, eggs, and vanilla until fluffy
- beat 5 minutes on high speed, scraping bowl occasionally
- on low speed, mix flour, baking powder and salt alternately with milk
- if using self-rising flour, omit baking powder and salt
- French Silk Frosting
- blend sugar, butter, chocolate and vanilla on low speed
- slowly add milk and beat until smooth
- pour batter into pan(s)
- bake oblong 45-50 minutes, layers 30-35 minutes or until wooden pick inserted in center comes out clean
- set aside and allow to thoroughly cool
- frost with French silk frosting
