Dad’s Cheesy French Onion Soup

Ingredients
- ⅓ cup of butter
- 2 Tbsp. Olive oil
- 2 tsp. salt
- 64 oz. beef broth
- 29 oz. chicken broth
- 1 ½ cup dry red wine
- 2 ea. bay leaves
- 1 tsp. paprika
- 2 garlic cloves
- Slices of slightly toasted stale French bread
- 1 tsp. sugar
- 6 cups thinly sliced Vidalia onions
- ¼ cup all purpose flour
- 6 cups thinly sliced red onions
- 1 tbsp. Worcestershire sauce
- 2 cups of shredded swiss cheese
- 2 cups shredded Pecorino Romano
- 1/2 cup shredded cheddar cheese
- French fried onions
- 1 cup shredded mozzarella
- 1 cup of gruyere cheese
Instructions
- In a Dutch oven melt butter and olive oil over medium heat,
- Add onions, salt, sugar, and cook for 20 minutes.
- Sprinkle flour over onions and cook for an additional 20 minutes.
- Add broth, Worcestershire sauce, bay leaves, paprika, garlic, wine, sugar.
- Bring to a boil and simmer on low for 45 minutes.
- Fill individual serving bowls with soup that are oven safe.
- On top of the onion soup place a layer of shredded swiss cheese,
- On top of the swiss cheese place a layer of shredded pecorino Romano.
- Next, place the toasted French bread on top of the pecorino Romano.
- Add a thin layer of cheddar cheese.
- Place a layer of mozzarella topped by a layer of gruyere on top of the bread and soup.
- Place in an oven and broil on high until the top layer of cheese is melted.
- Garnish with the fried onions.
