Lemon Garlic Mahi Mahi

Notes
Always a good idea to soak fish is milk in the refrigerator for one hour prior to preparation.
After removing fish from refrigerator, rinse and pat dry with paper towels.
Ingredients
- 4 ea. 1” thick mahi-mahi fillets
Lemon Garlic Mixture
- 2 tbsp. olive oil
- 2 tbsp. salted butter, softened
- ¼ tsp. black pepper
- 1 tbsp. finely chopped chives or parsley
- ⅛ tsp. kosher salt
- 2 tbsp. minced garlic cloves
- 1 tbsp. grated lemon peel
- 1 tbsp. fresh lemon juice
Instructions
- Preheat the oven to 400 F with a rack in the middle.
- In a small pot combine all ingredients of the Lemon Garlic Mixture and set aside.
- Important!!!! Use paper towels to pat fish completely dry.
- Sprinkle both sides of the fish with pinches of salt and pepper and set aside.
- In a large oven proof pan/skillet, heat the olive oil over medium high heat. Once the olive oil is sizzling hot add the fish filets and let cook on one side until browned, about 3 minutes.
- Carefully flip fish over to the other side, turn off the burner, and transfer the ovenproof pan/skillet into the preheated oven and allow it to cook for about 5 minutes. DO NOT OVERCOOK!
- While fish is cooking, heat Lemon Garlic Mixture over medium high, heat stirring constantly until melted and bubbly.
- Pour Lemon Garlic Mixture over cooked fish
