Pork Chops With Creamy Scalloped Potatoes

Ingredients
- 5 ea. Tbsp. butter, divided
- 2 ea. Cups of chicken broth
- 6 ea. Thick cut pork chops
- 1 ea. ½ cup of half and half
- Salt and pepper to taste
- 6 ea. potatoes peeled and thinly sliced
- 2 ea. Tsp. dried thyme
- 1 ea. Cup of shredded Cheddar cheese
- 3 ea. Tbsp. all-purpose flour
- ½ ea. Cup of diced onions
- 2 ea. Tsp. Dijon mustard
Instructions
- Preheat oven to 350 degrees F
- Grease a 9” X 13” baking dish with 1 ea. Tbsp. of butter
- Melt 1ea. Tbsp. of butter in a skillet over medium heat.
- Season pork chops with salt and pepper.
- Cook pork chops in a skillet until browned, about 3-5 minutes.
- Melt 3 ea. Tbsp. of butter in a small saucepan over medium heat.
- Stir mustard and thyme into the melted butter and season with s & p.
- Whisk flour into the butter mixture to make a thick paste.
- Wisk in chicken broth and half and half into the paste mixture and continue to simmer, stirring occasionally, until mixture thickens into a sauce, about 5 minutes, then remove from heat.
- Cover the bottom of the cooking dish with about half of the potato slices and half of the onions then sprinkle on half of the Cheddar cheese then arrange the pork chops over the cheese layer.
- Layer remaining potatoes and onions on top of the pork chops then pour the sauce evenly over the potato layer.
- Bake in a preheated oven for one hour.
- Remove the dish from the oven and top with remaining cheese, switch the oven to broil and continue to cook until the top is browned and bubbly, about 5 minutes.
