Aussie Chicken

Ingredients
- 4 ea. skinless, boneless chicken breasts pounded to ½” thickness
- 2 ea. cups of shredded Colby-Monterey Jack cheese
- 2 ea. tsp. seasoning salt
- 6 ea. slices of bacon cut in half
- ½ cup prepared yellow mustard
- ½ cup of honey
- ¼ cup light corn syrup
- ¼ cup mayonnaise
- 1 ea. tbsp. dried onion flakes
- 1 ea. tbsp. vegetable oil
- 1 ea. cup of fresh sliced mushrooms
- 5 ea. tbsp. butter
- 2 ea. tbsp. chopped fresh parsley
Instructions
- Rub chicken breasts with seasoning salt, cover and refrigerate for 30 minutes
- Preheat oven to 350 degrees F
- Place bacon in a shallow cooking sheet (covered with foil) and bake until just shy of crispy. (approx 10 mins. depending on thickness of bacon)
- Turn burner to medium, place 2 ea. tbsp. butter in skillet and when melted, add mushrooms and saute until slightly crisp
- In a medium bowl combine mustard, honey, corn syrup, mayonnaise and dried onion flakes then set aside.
- Put 3 ea. tbsp. butter into a non-stick skillet and turn the burner to high. When butter is melted, place chicken into the skillet. Turn chicken frequently for approx. 4 mins. until chicken is thoroughly browned on each side. Turn heat to med. and continue to cook, turning frequently, until chicken is thoroughly cooked (approx. 8 mins). Remove chicken from skillet and place the breasts into a 9”x13” baking dish. If breasts are thicker than ½” additional cooking time may be required
- Apply ½ of the sauce to the chicken breasts retaining the other half for dipping, Layer each breast with mushrooms, bacon and sprinkle top with shredded cheese
- Bake in preheated oven for 15 min. or until cheese is melted
- Garnish with parsley and serve with reserved honey mustard sauce.
