Baked Swai (Asian Catfish) with Thyme and Parsley

Ingredients
- 2 ea. swai filets, rinsed, and cut in half, and dried with a paper towel
- ⅛ cup of lemon sauce
- ⅛ cup of white wine
- 2 ea. tbsps. Butter
- ¼ tsp. chopped garlic
- 1 ea. tsp. Thyme
- 1 ea. tbsp. fresh parsley
- ½ small onion, sliced
- salt and pepper
Instructions
- Preheat oven to 325 degrees F
- Cut 4 ea. pieces of aluminum foil large enough to completely wrap pieces of fish and coat foil with butter
- Season fish with salt and pepper
- In a saucepan, melt butter and add garlic, and cook on low heat until you smell the garlic aroma. *Do not brown butter or garlic.
- Add lemon, white wine, thyme, and parsley with a dash of black pepper
- Place each piece of fish on the individual pieces of aluminum foil
- Pour the butter and herb sauce equally onto pieces of fish
- Place slices of onion on top of fish and fold close the aluminum foil
- Place foil packets on a baking tray and bake for 10 minutes or until fish flakes easily
- Serve over rice
