Dad’s Amazing Mushroom Soup

Notes
If you are a fan of mushroom soup I am sure you will make this recipe one of your favorites. If you are not a fan of mushroom soup, this recipe just might convert you to the ranks of mushroom soup lovers.
Ingredients
- 1 cup of butter
- 1 large baking potato, cubed
- ¼ cup of all purpose flour
- ¼ tsp. ground nutmeg
- ¼ cup of Sherry wine
- 1 cup of heavy whipping cream
- 1 small onion (chopped)
- 2 bay leaves
- ½ tsp. ground white pepper
- 1 tsp. Salt
- 1 tsp. fresh thyme
- 42 oz. chicken broth
- Fresh chives
- 1/8 tsp. cayenne pepper
- Fresh ground pepper
- 3 cloves of garlic finely chopped
- 1 ½ lbs. sliced mushrooms (cremini preferred)
Instructions
- Peel and cut into small pieces the baking potato then boil in a separate pot until soft.
- Melt ½ cup of butter in a large skillet on medium heat.
- Sauté 1 lb. of mushrooms, onion and garlic in a skillet until onions are translucent.
- Add sherry to the skillet and continue to sauté for five minutes.
- Remove mushroom mixture from skillet and place in a stock pot along with all remaining ingredients.
- Bring to a low simmer (very important- DO NOT BRING TO A FULL BOIL), and allow to simmer for 20 – 30 minutes.
- While ingredients are cooking in the stock pot , melt ½ cup of butter in a skillet, add ½ lbs. of sliced mushrooms and sauté’ until mushrooms are cooked completely through and thoroughly brown then set them aside.
- Using a stick blender, thoroughly blend all ingredients in the stock pot.
- After blending with the stick blender, add the sautéed mushrooms into the mixture in the stock pot.
- Serve with a garnish of fresh chives, a sprig of fresh thyme, fresh ground pepper, and if you are feeling wild, a small splash of brandy.
