Dad’s Own Cincy Chili

Notes
Cincinnati’s finest!
- Chili can be served:
- plain with or without shredded cheddar cheese, chopped onions, kidney beans.
- 2 Way: chili over spaghetti
- 3 Way Cheese: chili over spaghetti topped with shredded cheddar cheese
- 3 Way Onion: chili over spaghetti topped with chopped onions
- 4 Way Bean: chili over spaghetti topped with kidney beans and shredded cheddar cheese
- 4 Way Onion: chili served over spaghetti topped with chopped onions and shredded cheddar cheese
- 5 Way: chili served over spaghetti, chopped onions, kidney beans, and shredded cheddar cheese
Usually served with a side of oyster crackers.
Ingredients
- 5 ea. lbs. lean ground beef
- 2 ea. sm. onions finely chopped
- 14 ea. cups water
- 1 ea. 15 oz. can tomato sauce
- 2 ea. cans 6 oz. tomato paste
- 3 ea. chopped garlic cloves
- 2 ea. Bay leaves
- 2 ea. tsp garlic powder
- 3 ea. tsp. cinnamon
- 6 ea. tsp. salt
- 2 ea. tsp. cumin
- 1 ea. tsp. Worcestershire sauce
- ½ ea. tsp. ground cloves
- ¼ ea. tsp. black pepper
- 2 ea. tsp. ground allspice
- 1 ea. tsp. sugar
- 4 ea. tbsp. apple cider vinegar
- 1/2 ea. cup mild chili powder
- 1½ ea. tsp. crushed red pepper
- 3 ea. whole Chile de Arbol
- 1½ ea. tsp. white distilled vinegar
- 1 oz. unsweetened baking chocolate
Instructions
- Brown beef and onions, drain “all” excess fat, then set beef and onions aside.
- Add water into a large pot
- Add the tomato paste, chocolate, and tomato sauce and cook under medium heat whisking to break up tomato paste.
- Add all remaining ingredients including beef and onions.
- Bring to a boil, stirring frequently.
- Once boiling, turn the heat down to medium-low and cook at a simmer for a minimum of 1 ½ hrs. stirring frequently until the sauce has thickened quite a bit.
- Remove bay leaves and Chile de Arbol then mix carefully with a stick hand mixer to desired consistency.
