Forgotten (Christmas) Cookies

Notes
Once you have tried these cookies, they will never be forgotten.
You might as well double this recipe. Trust me you will have no trouble eating all of them.
Ingredients
- 2 ea. lg. eggs (at room temperature!)
- 1 ea. pinch fine salt
- 3½ oz. confectioners sugar
- 1 ea. tsp. cornstarch
- 1 ea. tsp cider or white wine vinegar
- ⅛ tsp. cinnamon
- ⅛ tsp. nutmeg
- 2½ oz. semi sweet chocolate chips
- 2½ oz. pistachios (chopped or whole)
Instructions
- Preheat oven to 350 degrees
- Line a baking sheet with parchment paper
- Separate egg whites from yolks
- Whisk together egg whites and salt (an electric mixer works best) in a grease free bowl until egg whites form peaks.
- Slowly whisk in confectioners’ sugar until fully blended.
- Slowly fold in cornstarch, vinegar, nutmeg and cinnamon.
- Slowly fold in pistachios and chocolate chips.
- Using a spoon, drop portions of cookie mixture onto parchment to form 2” diameter cookies.
- Place the baking sheet into the oven, shut the door and immediately turn off the oven.
- Let the cookies sit in the turned off oven approx. 8 hrs. undisturbed—–NO PEAKING!!!!! Done!
