Grilled Honey-Glazed Pork Chops

Ingredients
- 4 ea. (10 oz) bone in pork rib or center cut chops, about 1” thick, trimmed
- ⅛ tsp. cayenne pepper
- 1 ea. tsp. salt
- 1 ea. tsp. pepper
- 2 ea. tbsps. cider vinegar
- ½ ea. tsp cornstarch
- ¼ cup honey
- 1½ tbsps. Dijon mustard
- ½ tsp. minced fresh thyme
- ¼ cup sugar
Instructions
- Cut 2 ea. slits about 2” apart through fat and connective tissue around the outside of each chop.
- Combine the sugar, salt, and pepper in a bowl.
- Pat chops dry with paper towels and rub with sugar mixture.
- Whisk vinegar and cornstarch in a small saucepan until no lumps remain.
- Stir in honey, mustard, thyme, and cayenne and bring to a boil.
- Reduce heat to medium-low and simmer until glaze is reduced to ¼ cup (5-7 minutes).
- On your gas grill, turn all burners to high, heat the grill until very hot (about 15 minutes).
- Leave the primary burner on high and turn other burners to medium.
- Clean and oil cooking grate.
- Place chops on medium heat grates, with lid covered, and cook on each side 4-5 minutes until meat registers 140 degrees.
- Brush chops with glaze and grill glazed side down over the hot side of the grill for about 1½ -2 minutes and repeat to second side.
- Repeat this glazing process 1 more time.
- Remove chops from grill, tent, and allow to rest for 5 -10 minutes before serving.
