Renee’s/Mrs. Klink’s Cheesecake recipe

Ingredients
- CRUST
- 10 Double graham crackers-crushed (OK to make extra!)
- 2 T. sugar
- 1 stick of butter-melted
- FILLING
- 2 – 8oz. cream cheese-softened
- 1/2 Cup sugar
- 2 Tbsp. milk
- 3 eggs
- 1 tsp. vanilla
- TOPPING
- 1 Pint of sour cream
- 1 Tbsp. sugar
- 1 tsp. vanilla
Instructions
- CRUST
- 10 Double graham crackers-crushed (make extra!)
- 2 Tbsp. sugar
- 1 stick of butter-melted
- mix together
- FILLING
- 2 – 8oz. cream cheese-softened
- 1/2 C. sugar
- 2 T. milk
- 3 eggs
- 1 tsp. vanilla
- Blend until smooth
- 9 INCH PIE PAN
- Press crust into pie pan (I use a spoon)
- Pour filling into crust
- Bake on 350 for 30 minutes
- Cool in fridge 1 hour
- TOPPING
- 1 Pint of sour cream
- 1 Tbsp. sugar
- 1 tsp. vanilla
- Mix together and spread on pie
- Bake at 450 degrees for 5 minutes only
- Cool in fridge
The Story of Mrs. Klink’s Cheesecake
Even when I was still in a highchair I would say to my mom “do you what to talk?” I always enjoyed conversations with grown-ups even in my youngest years. I would knock on doors in my neighborhood and ask the adults “do you want to talk”. Even though they had kids my age, I was not interested in talking to people my age, but rather the parents. Weird, huh!
There was an elderly couple who lived directly across the street from my home on 2208 Quebec Rd. They had no children and pretty much kept to themselves. Mrs. Klink was a tiny little lady in her sixties, who would walk from her home on Quebec to the intersection of Westwood and Quebec, I guess about a quarter of a mile, to catch a bus to the place where she worked. Her walk was as if she was trying to walk as fast as she could without running! She was fun to watch. Mrs. Klink was a seamstress who made formal dresses for very young children. Every once in a while she would surprise Bev with a new dress. At the end of the day, she would get off of the bus at the same intersection and walk home.
So, following my routine of randomly knocking on the doors of neighbors to share conversations with them, I was invited in to talk with Mrs. Klink. During the conversation she offered me a piece of her homemade cheesecake. It was so good. So occasionally Mrs. Kling would make a and bring over a whole cheesecake. I would eat most of it in one sitting! We eventually ended up with the recipe which I passed on to Renee’ who makes Mrs. Klink on a regular basis.
The family tradition on Christmas Eve was for everyone to gather at my grandparents home. The attached picture is of Mr. Klink who would always play Santa Clause and distribute presents to the kids. He never brought me a cheesecake.
