Kevin’s Cincinnati Chili

Notes
- Try this with Skyline’s habanero cheese mix.
- Serve with spaghetti – two way
- Serve with spaghetti & grated mild cheddar cheese – three way
- Serve with spaghetti, grated mild cheddar cheese & onions – four way
- Serve with spaghetti, grated mild cheddar cheese, onions & kidney beans – five way
- Season with tabasco sauce
- Serve with oyster crackers
Ingredients
- 1 ea. qt. Water
- 8 ea. whole cloves, ground
- 2 ea. pounds of ground chuck
- 1 ea. lg. Bay leaf
- 2 ea. med. onions finely chopped
- 2 ea. teaspoons of salt
- 5 – 6 cloves garlic, crushed
- 2 ea. teaspoons ground cinnamon
- 1 ea. 15 oz. can tomato sauce
- 1 ½ ea. teaspoons ground cayenne pepper
- 2 ea. tablespoons cider vinegar
- 1 ea. teaspoon ground cumin
- 1 ea. tablespoon Worcestershire sauce
- ½ oz. unsweetened chocolate, grated
- 10 ea. peppercorns, ground
- 8 ea. whole allspice, ground
Instructions
- In a 4 – 6 quart pot, bring water to a boil.
- Add ground chuck.
- Stir until separated and reduce heat to a simmer.
- Add onions, garlic, tomato sauce, vinegar and Worcestershire sauce and stir.
- Add remaining ingredients and bring back to a boil, then reduce heat and simmer for
- about 2 ½ hours.
- Cool uncovered and refrigerate overnight.
- Before serving, skim all or most of the fat and discard.
