Slow Cooker Hungarian Beef Goulash

Notes
*Paprika specifically labeled as “Hungarian” is worth seeking out for this dish
Ingredients
- 2 lbs. beef stew meat, such as chuck, trimmed and cubed
- 1½ -2 tbsps. sweet or hot paprika (or a mixture of the two) preferably Hungarian
- 2 ea. tsp. caraway seeds
- 1 tsp. salt
- Freshly ground pepper to taste
- 1 ea. large onion, chopped
- 1 ea. sm. red bell pepper, chopped
- 1 ea. 14 oz. can diced tomatoes
- 1 ea. 14 oz. can reduced sodium beef broth
- 1 ea. tsp. Worcestershire sauce
- 3 ea. cloves garlic, minced
- 4 ea. Bay leaves
- 2 ea. tbsps. chopped fresh parsley
- 3 ea. tbsp. cornstarch mixed with 6 ea. tbsps. water
Instructions
- Place beef in 4 quart or larger slow cooker
- Crush caraway seeds to release flavor (bottom of a saucepan works)
- Mix caraway seeds, paprika, and salt in a small bowl
- Sprinkle beef with spice mixture and toss to coat thoroughly
- Top beef with onions and red bell pepper
- Combine tomatoes, broth, Worcestershire sauce and garlic in med. saucepan and bring to a simmer
- Pour this mixture over beef and vegetables
- Place bay leaves on top
- Cover and cook until beef is very tender (4½ hrs. on high, or 7½ hrs. on low)
- Discard the bay leaves
- Remove any visible fat from top of stew
- Add cornstarch mixture to stew and cook on high, stirring 2-3 times, until slightly thickened (10-15 mins)
- Serve sprinkled with fresh parsley over your pasta of choice
